Clean Eating Deviled Eggs

It’s everyone’s favorite appetizer, snack, and brunch food. The Deviled Egg. Take a hard boiled egg, shell it, slice it, and fill the yoke with a delicious mix of clean mayo, spices, and a touch of mustard. Wait. Mayonnaise? Most mayonnaise brands, especially the commercially made varieties, are not on our list of healthy foods, for a number of reasons. Fortunately, we’ve discovered a delicious mayo that’s clean and tastes as good, if not better, than any of the well known brands.

Sprinkle some paprika on your eggs to finish, and no one will know the difference between these healthy deviled eggs and the traditional version. But when you tell them to take a second egg, without the guilt, they’ll be asking for the recipe!

Clean-Eating Deviled Eggs
Yields: 4 servings | Serving Size: 2 deviled eggs | Calories: 115 | Total Fat: 6g | Saturated Fat: 1g | Trans Fat: 0g | Cholesterol: 3mg | Sodium: 130mg | Carbohydrates: 1g | Fiber: 1g | Sugars: 1g | Protein: 2g | SmartPoints (Freestyle): 5 |

Ingredients
  • 4 large eggs, hard boiled and shells removed
  • 2 tablespoons clean mayo
  • 1/2 teaspoon apple cider vinegar
  • 1/2 teaspoon yellow mustard, no sugar added
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon paprika for garnish



Instructions
  1. Slice hard boiled eggs in half lengthwise. Remove yolks, add to a small mixing bowl and mash with a fork. Add the remaining ingredients, except paprika, and stir until creamy.
  2. Evenly divide mixture inside the cooked egg whites. Sprinkle with paprika and refrigerate until ready to serve
